3. Hearty Bean Burrito Bowl

This recipe offers a healthier and cleaner version of the typical burrito bowl by swapping out tortilla chips/strips and white rice for brown rice. It only takes about 25 minutes to put together, too! To make your own deconstructed burrito, here’s what you need:

  • 3 tbsp. fresh lime juice
  • 2 tbsp. olive oil
  • ½ tsp. ground cumin
  • Kosher salt and pepper
  • 2 c. cooked brown rice
  • 1 can black beans
  • ½ head romaine lettuce
  • 1 c. roughly chopped fresh cilantro

This particular recipe combines the tropical sweetness of pineapple with the savory spices of slow cooker chili for some ‘sweet heat.’

  • 2 lbs. ground beef
  • Two 15.5 oz. cans of dark kidney beans
  • 28 oz. can crushed tomatoes
  • 16 oz. can crushed pineapple
  • 1 ½ c. matchstick carrots
  • 8 oz. sliced mushrooms
  • 1 c. diced green pepper
  • 1 c. diced onion
  • 1 tbsp. chili powder
  • Salt/pepper to taste
